Lower-Carb Holiday Stuffing

(I personally use INKED Keto Bread from Costco.)

Per 1/2-Cup Serving (6 Servings)

  • Total Carbs: 12.6 g

  • Fiber: 11.17 g

  • Net Carbs: 1.43 g

  • Fat: 2.3 g

  • Protein: 4 g

  • Calories: ~96 kcal

Ingredients

  • 6 slices low-carb or keto bread, cut into cubes

  • 1 tbsp butter or ghee

  • 1/4 cup chopped red onion

  • 1/4 cup chopped celery

  • 1 tsp dried Italian Seasoning

  • 1 tsp dried Poultry Seasoning

  • 1 cup poultry or vegetable broth as needed

  • Salt and pepper to taste

Optional Add-Ins:

  • Cooked diced poultry organ meats

  • Sliced mushrooms

  • Cooked crumbled spiced sausage

Instructions

  1. Dry bread cubes at 350°F for 10-20 minutes.

  2. Butter a small round baking dish. Preheat oven to 350°F.

  3. Sauté onion and celery in butter and herbs, salt, and pepper;

    cook until softened.

  4. Combine bread cubes and sautéed mixture in bowl.

  5. Add broth spoonfuls at a time and mix gently.

  6. Transfer to baking dish and bake 20–25 minutes until golden.
